Congratulations to spinout company Myco4food and Aslak H. C. Christiansen, CEO, and former Research Assistant at Aalborg University, who has been granted an InnoFounder from Innovation Fund Denmark 🌱The global demand for protein is significantly increasing, calling for new and sustainable solutions within the food and agricultural sector.
Myco4Food addresses this challenge through a new technology capable of transforming organic waste residuals into protein-rich and nutritious food ingredients by using edible fungi and solid-state fermentation.
The technology can be a part of providing new food ingredients that can complement plant-based products with essential nutrients and flavor and deliver price-competitive alternative protein sources for food companies.
Behind the technology is also Associate Professor Mette Lübeck and Associate Professor Peter Stephensen Lübeck from Department of Chemistry and Bioscience, Aalborg University, Denmark.
Furthermore, the researchers have teamed up with Jesper Schierbeck-Hansen, whom has +25 years of commercial knowledge and experience within this field of science.
The project will start the 1.10.2022.
